For Christmas, Birthdays, any occasion most easiest and fun ful way to celebrate!!!
***This recipe makes 2 1/2 to 3 dozen cookies depend on the cookie shape and sizes
Ingredients :
2 ¼ cups All-purpose flour
½ tsp Baking Powder
¾ cup Butter
¾ cup Sugar
1 Large egg
½ tbsp Pure Vanilla extract
¼ tsp Almond extract
¼ tsp Salt (if use unsalted butter)
For Icing
2 ½ cups Icing Sugar
1 ½ tbsp Light Corn Syrup
1 tsp Vanilla extract
2-3 tbsp Water (depend on the preferred consistency of icing)
Gel food Coloring
Directions:
In a large bowl mix together flour and baking powder and set aside
Stand mixer fitted with paddle attachment, beat butter and sugar on medium high speed until light and fluffy
Add egg, vanilla and almond extract and beat on high until mix well
Scrape the side and bottom of the bowl and beat for another minute
Put mixer on low speed and add flour and beat until everything well combined
If dough seems too soft add about 1 tablespoon of flour and mix
Divide dough in half and roll each half between parchment paper to a disk shape stack both disks with the parchment paper and refrigerate for 2 hours
Remove dough from the refrigerator and roll between the same parchment to ¼ inch thick. (roll between parchment prevent sticking dough into rolling pin and counter top and easy cleaning)
If dough seems too soft dust with flour and roll.
If the dough has warmed during rolling, put dough back on refrigerator for 10 minutes to chill
Cut into preferred shapes and arrange on baking sheet with parchment paper least 1-inch apart
Bake at 350F for 10-12 minutes and rotate baking trays halfway through baking time until edge of the cookies turn light brown
Allow cookies to cool on trays for 5 minutes and transfer to wire rack to cool completely
For Icing
In a large bowl mix icing sugar,corn syrup, vanilla and water 1tablespoon at time until smooth and desired consistency
Divide icing into separate bowl and add colors
**Add-ons
*** if you want make more icing for each ½ cup icing sugar add 1 tbsp corn syrup, ¼ tsp vanilla and 2 tbsp water
Decorate cookies and allow icing to set 5 to 8 hours
Once icing is set, store them in an airtight container and can keep these cookies upto a week at room temperature.
