For cake
2 ½ cups All-purpose flour
1 tsp. Baking Powder
¼ tsp Ground Cinnamon
¼ tsp Salt
4 Eggs at room temperature
2 cups Granulated sugar
½ cup Olive oil
½ cup Butter melted
½ cup warm water
1 tbsp Vanilla
For apple mix
3 ½ cups Gala or Granny Smith apples peeled and cut into 1cm cubes
⅓ cup granulated sugar
½ tbsp ground cinnamon
Juice of ½ lemon
Mix together apples, cinnamon, sugar, lemon juice and keep aside
Sift together flour, baking powder and salt set aside
Beat eggs with sugar unit light and creamy
Add oil, melted butter,water and vanilla beat in medium high speed
Set mixer speed to low and add the flour mix and beat until well incorporated
Add ½ cup from apple mix to the batter and fold in using a wooden spoon or spatula
Spoon ¼ of the batter into the pan and arrange the apple around top and of the batter and repeat for 2 more layers finishing with the batter on top.
Bake at 350F for 70 to 90 minutes until the top is brown and a skewer inserted in the middle comes out clean.
Cool the cake on the pan before unfolding and enjoy slightly warm.
